The experience often begins at a local market, where your host walks you through the colour and bustle, choosing fresh vegetables, herbs, cheeses, and spices, and teaching you what is what. Markets are the beating heart of Egyptian food life, and seeing one through local eyes is an experience in itself. Then it is into the kitchen, aprons on.
Together you cook a spread of Egyptian classics. Perhaps koshari, the beloved national dish of rice, lentils, pasta, and crispy onions; taameya, Egypt’s fava-bean answer to falafel; molokhia, the green stew that divides and delights; mahshi, vegetables stuffed with herbed rice; and fresh baladi bread. Your host shares the little secrets and family touches that recipes never capture, and the kitchen fills with the easy conversation that cooking together always brings.
Best of all, you sit down and eat what you have made, as a guest at the family table. This is where the real exchange happens, over full plates and shared laughter.
